After being hand-harvested, the grapes for this particular wine are fermented using indigenous yeasts in Italian Terracotta Amphorae. Once the fermentation process is complete, the amphorae are sealed and the wine continues to mature on its skins for around 4 months. The wine is then bottled without any filtration or the use of fining agents as well as no added sulphites.
On the nose, expect notes of dried peach, apricot and nuts. The palate is medium bodied, showcasing the tannic structure you may expect of a light red, due to the prolonged period of time spent macerating with the skins. Crucially however, it maintains the freshness you would expect from the Pinot Grigio variety. An orange wine of great balance, this is the ideal partner to heavier seafood dishes, cheese or spicy Asian-inspired cuisine.
